As we enter the fabric, we hear the machine, we discern faces through the smoke, we feel the endless beat of a very old routine. The family has been making tofu for the past six generations. Same place, same hands, same craftsmanship. The tofu is spread around Jianshui, in houses and in restaurants. People gather around a grill and share a moment until the last bite. We followed some of them. We met three women who in their ordinary life are keeping tofu alive and are shaping the future of their city.
